Zesty Orange Cupcakes: A Citrusy Sweet Treat
Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a bowl, whisk together 1 and 1/2 cups of all-purpose flour, 1 and 1/2 teaspoons of baking powder, and a pinch of salt.
In another bowl, cream together 1/2 cup of softened butter and 3/4 cup of granulated sugar until light and fluffy.
Beat in 2 large eggs, one at a time, followed by 1 teaspoon of vanilla extract and the zest of one orange.
Gradually add the dry ingredients to the wet mixture, alternating with 1/2 cup of freshly squeezed orange juice, mixing until smooth.
Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean
Let the orange cupcakes cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
