Flavorful Egusi Soup: A Traditional West African Delight

Heat palm oil in a pot, sauté chopped onions, tomatoes, and peppers until soft.

Add ground egusi (melon) seeds and fry until golden brown.

 Pour in vegetable or meat stock and bring to a simmer.

Season with salt, bouillon cubes, and ground crayfish.

 Add cooked meats, fish, or vegetables of choice.

Simmer until the egusi thickens and flavors meld.

 Garnish with chopped spinach or bitter leaves.

Serve hot with fufu, pounded yam, or rice for a hearty meal.
